Photo by Kat Schuster. <\/figcaption><\/figure>\n\n\n\n<p>Good morning, it\u2019s <strong>7 a.m.<\/strong>, though it somehow feels like it\u2019s <strong>5 a.m.\u00a0<\/strong><\/p>\n\n\n\n<p>I could never fully wrap my head around why this hangover-adjacent phenomenon occurs at the spring forward of <strong>Daylight Savings Time<\/strong>, but I suppose I could just be feeling that a little harder, having just returned from my heavenly <strong>NOLA<\/strong>-vacay.\u00a0<\/p>\n\n\n\n<p>(Speaking of which, thank you to everyone who responded to <a href=\"https:\/\/lbpost.com\/hi-lo\/newsletter\/call-me-baby-a-long-beacher-goes-to-nola\/\">last week\u2019s newsletter<\/a> with compliments and ((a ton of)) recommendations for the next time I visit <strong>Crescent City<\/strong> \u2014 <em>j\u2019adore<\/em>.)<\/p>\n\n\n\n<p>Anyway, let\u2019s brush the sleepy out of our eyes, pull on our favorite shades and prepare ourselves for an extra hour of sun \u2014 and warmer weather on the horizon. To me, that says it\u2019s picnic season again, which also means it\u2019s charcuterie season.&nbsp;<\/p>\n\n\n\n<p>What? You can\u2019t have a proper outdoor party without a party platter. And while charcuterie is a 15th-century <strong>French<\/strong> term for cured meat (that\u2019s shar-coo-ter-ee), today it\u2019s pretty much just used to describe any pile of sharable yummies.&nbsp;<\/p>\n\n\n\n<p>So, let\u2019s get to it. First, I\u2019ll explain how to build a charcuterie board and then, I\u2019ll share some of my favorite parks to enjoy your beautiful party platter.&nbsp;<\/p>\n\n\n\n<p>Last summer, I interviewed Vanessa Harmon, a former lawyer turned turophile (a cheese master), who had just opened <a href=\"https:\/\/lbpost.com\/hi-lo\/the-vintage-lbc-brings-a-sit-down-cheese-and-wine-experience-to-bixby-knolls\/\">The Vintage LBC,<\/a> a cheese and wine shop in Bixby Knolls. Today, I\u2019ll share some of the knowledge she imparted to me that day as well as some of the tricks I\u2019ve picked up along the way.&nbsp;<\/p>\n\n\n\n<p>Here are six steps to building a charcuterie board.<\/p>\n\n\n\n<p><strong>Step 1: Pick your theme<\/strong><\/p>\n\n\n\n<p>Don\u2019t bristle; a platter full of snacks (a.k.a. <strong>Girl Dinner<\/strong>) is hard to hate, easy to make and you can really assemble a charcuterie of anything \u2014 from a <a href=\"https:\/\/amandascookin.com\/bloody-mary-charcuterie-board\/\">Bloody Mary-themed board <\/a>to a <a href=\"https:\/\/www.mapleandmango.com\/waffle-board\/\">waffle breakfast board<\/a>. Heck, you could even try to build this eccentric <a href=\"https:\/\/fantabulosity.com\/st-patricks-day-charcuterie-board\/\">St. Patrick\u2019s Day<\/a> board with green cupcakes, <strong>Rainbow Airheads<\/strong>, chocolate coins and of course, <strong>Lucky Charms<\/strong>.&nbsp;<\/p>\n\n\n\n<p>I may have turned to a vegetarian (sometimes pescatarian) diet last year, but that hasn\u2019t stopped me from putting on a mean meat-free party platter when the occasion arises. Check out my vegetarian board below.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lh7-us.googleusercontent.com\/nh6pat0ltL1GXJlasd272UF3D2jElcevNjGsHSOhme1S-D7XzTGAufkY-XqOvgPDOLH4of2tLUCO-zKc3VEPgHv5inKF-zWUZCoJuAkzYTA756-rbIVmgAW9Y9fKGOM6Gjdrx0obu7CJEUY0uUeztl0\" alt=\"\" \/><figcaption class=\"wp-element-caption\">Photo by Kat Schuster.<\/figcaption><\/figure>\n\n\n\n<p>Vanessa for one, sells a good amount of vegan and vegetarian cheese in her shop. And now, you can get cured meat mimicry at the Plant Butchers, the city\u2019s first vegan deli.&nbsp;<\/p>\n\n\n\n<p>When picking your theme, you may also want to consider the season. Like fruits and vegetables, there are seasons for some cheeses. For the spring, Vanessa likes an Alp Blossom, a fragrant cow-milk cheese that is covered in dry flowers.<\/p>\n\n\n\n<p><strong>Step 2: Go shopping<\/strong><\/p>\n\n\n\n<p>You\u2019re going to need to visit a grocery store, deli and\/or a cheese shop to get everything you need. Here are the places I recommend checking out in Long Beach:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/www.olivesgourmetgrocer.com\/provisions\">Olives Gourmet Grocer<\/a>&nbsp;<\/li>\n\n\n\n<li><a href=\"https:\/\/www.winecheesetc.com\/\">Wine &amp; Cheese Etc.<\/a>&nbsp;<\/li>\n\n\n\n<li><a href=\"https:\/\/thevintagelbc.com\/\">The Vintage LBC&nbsp;<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.theplantbutchers.com\/\">The Plant Butcher<\/a> (for the vegans)&nbsp;<\/li>\n\n\n\n<li><a href=\"https:\/\/www.yelp.com\/biz\/angelos-italian-deli-long-beach\">Angelo\u2019s Italian Deli&nbsp;<\/a><\/li>\n\n\n\n<li>Trader Joe\u2019s (This is an obvious one but you really can get everything you need here and it will be your cheapest option)&nbsp;<\/li>\n\n\n\n<li>Lazy Acres&nbsp;<\/li>\n\n\n\n<li>Gelsons&nbsp;<\/li>\n\n\n\n<li>Whole Foods&nbsp;<\/li>\n<\/ul>\n\n\n\n<p><strong>Step 3: Get cheezy&nbsp;<\/strong><\/p>\n\n\n\n<p>I always pick my cheeses first and build my masterpiece around them.&nbsp;<\/p>\n\n\n\n<p>According to Vanessa, balance between flavor and texture is important when it comes to selecting cheeses. You might want a variety \u2014 a hard or semi-firm cheese such as the Drunken Goat (goat\u2019s milk); a soft, double-cream cheese such as Fromager D\u2019affinois or an aged Gouda.<\/p>\n\n\n\n<p>If you\u2019re building a strictly vegetarian board, you might consider visiting a cheese shop like Vanessa\u2019s that offers cheese made with vegetable rennet instead of animal rennet. For example, plant-based rennets can be produced with artichokes.<\/p>\n\n\n\n<p>To find dairy-free options, the Plant Butchers often have vegan brie, cotija, goat cheese, mozzarella, sharp cheddar spread and Swiss on hand.&nbsp;<\/p>\n\n\n\n<p><strong>Step 4: Pick your protein&nbsp;<\/strong><\/p>\n\n\n\n<p>After selecting a balance of cheese textures and flavors, it\u2019s time to pick your meats.<\/p>\n\n\n\n<p>\u201c&#8230;with the super creamy cheese, let\u2019s get you some prosciutto,\u201d Vanessa said.<\/p>\n\n\n\n<p>To pair with a hard cheese, Harmon suggests salami or a patte.<\/p>\n\n\n\n<p>(I used to love prosciutto, and it\u2019s one of the few meaty things I do miss. If anyone knows where to find a vegan substitute, email me ASAP.)<\/p>\n\n\n\n<p>For those building a vegetarian board, I\u2019d opt for extra nuts, which add a nice crunch. You can also add marinated or roasted tofu, Trader Joe\u2019s\u2019 new <a href=\"https:\/\/www.traderjoes.com\/home\/products\/pdp\/vegan-pepperoni-076348\">vegan pepperoni<\/a>, or some of the meat alternatives offered at the Plant Butchers.&nbsp;<\/p>\n\n\n\n<p>Personally, since I do still eat fish occasionally, I like to add <a href=\"https:\/\/www.costcobusinessdelivery.com\/foppen-norwegian-smoked-salmon-slices%2C-12-oz.product.100075738.html\">thinly sliced smoked salmon<\/a> either from Costco or Trader Joe\u2019s.&nbsp;<\/p>\n\n\n\n<p><strong>Step 5: Fill in the gaps&nbsp;<\/strong><\/p>\n\n\n\n<p>Here\u2019s where you get to add your fillers, veggies, fruits and sides \u2014 cucumbers, carrots, strawberries, hummus, honey, jam, dried fruit, chocolate, tzatziki, olives, pickles, beets, artichoke hearts, gherkins, roasted tomatoes \u2014 the sky&#8217;s the limit.&nbsp;<\/p>\n\n\n\n<p>\u201cLots of dried fruit and (dried candied) oranges are wonderful,\u201d Vanessa said. \u201cIt gives it a nice pop of color.\u201d<\/p>\n\n\n\n<p><strong>Step 6: Make it pretty&nbsp;<\/strong><\/p>\n\n\n\n<p>Speaking of color, my finishing touch is always to add some flowers and rosemary. Peony tulips are great for spring, while eucalyptus and fresh sage can be great for the holiday season. Vanessa tells me you can even find edible flowers to adorn your board with.&nbsp;<\/p>\n\n\n\n<p>Plus, you can mess around with the actual arrangement of your palette, I mean your board.&nbsp;<\/p>\n\n\n\n<p>\u201cI\u2019m always learning new techniques,\u201d Vanessa said. \u201cYou can make the meats into a salami rose, you can make these little bridges.
