{"id":10980,"date":"2019-12-10T06:00:14","date_gmt":"2019-12-10T14:00:14","guid":{"rendered":"https:\/\/lbpost.com\/hi-lo\/?p=30000005164"},"modified":"2019-12-25T20:48:26","modified_gmt":"2019-12-26T04:48:26","slug":"willes-tin-shop-new-distillery-with-a-long-history","status":"publish","type":"post","link":"https:\/\/lbpost.com\/esd\/hi-lo\/willes-tin-shop-new-distillery-with-a-long-history","title":{"rendered":"Wille&#8217;s Tin Shop: New distillery with a long history"},"content":{"rendered":"<p>It was a match made in history.<\/p>\n<p>The grand opening of Wille\u2019s Tin Shop, Long Beach\u2019s second distillery, was held on Thursday, Dec. 5, the 86th anniversary of the passing of the 21st Amendment, or \u201cRepeal Day,\u201d as it has come to be known.<\/p>\n<p>Turns out that Thursday was also the first, and one of the last chances to taste and buy the distillery\u2019s 101 proof vodka, Long Beach Water.<\/p>\n<p>\u201cThe taxes double at 100 proof,\u201d master distiller Forest Cokely said, so they plan in the future to offer batches at 99 proof.<\/p>\n<figure id=\"attachment_10000009800\" aria-describedby=\"caption-attachment-10000009800\" style=\"width: 2823px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-10000009800\" src=\"https:\/\/lbpost.com\/hi-lo\/wp-content\/uploads\/2019\/12\/WillesTinShop-1180346.jpg\" alt=\"\" width=\"2823\" height=\"3759\" \/><figcaption id=\"caption-attachment-10000009800\" class=\"wp-caption-text\">A bottle of the first commercial batch of &#8220;Long Beach Water&#8221; sits on the shelf at the grand opening of Wille&#8217;s Tin Shop on Dec. 5 in Long Beach. The first batch was made at 101 proof, while future batches will be lowered to 99 proof to avoid increased taxes according to master distiller Forest Cokely.<\/figcaption><\/figure>\n<p>Wille&#8217;s began as an idea of Robert Molina, owner of Roxanne\u2019s cocktail lounge, who brought it to Cokely years ago. His response was anything but encouraging.<\/p>\n<p>\u201cI was like, \u2019It\u2019s gonna be terrible,\u2019\u201d Cokely said. \u201c\u2018The logistics, the legalities, licensing\u2014all the \u2018L\u2019s are gonna be a lot of problems.\u2019\u201d<\/p>\n<p>Cokely finally gave in. Even then, opening Wille\u2019s took more than four years to navigate the \u201cL\u201ds. The federal government shutdown four times during the process causing delays in licensing. Being only the second distillery in Long Beach, local government and regulators had little procedural precedent.<\/p>\n<p>One precedent is that with its present license, Wille&#8217;s is not able to have folks just show and ask for a drink. You are permitted to schedule tastings at the facility and, if you&#8217;re 21, you&#8217;re allowed to buy a bottle ($25) there, with a limit of two a day. If you like your Long Beach Water in a glass, neat or mixed, you&#8217;re in luck since Wille&#8217;s happens to be located in the same building as Roxanne&#8217;s which will offer the spirit. And soon, you&#8217;ll be able to get a bottle at local liquor stores, including Hi-Lo Market, which opens Thursday, Dec. 12.<\/p>\n<p>The distillery is named after a 113-year-old metal shop that operated in Long Beach and Signal Hill. Debbie King was the last owner of the enterprise until it shut down in 2014. She sold the name to Molina, who repurposed it for the distillery.<\/p>\n<p>\u201cI didn\u2019t know how he was gonna fit \u2018tin shop\u2019 with alcohol but he really tied it in with the craftsmanship and integrity,\u201d King said.<\/p>\n<p>Memorabilia that King had saved from the original tin shop is everywhere in the distillery. She went around the room pointing at the items and recalling stories as one might with old family photos. The W on the Wille sign is backwards. It used to be neon. The backwards W on the sign has become one of the central branding marks for the distillery.<\/figcaption><\/figure>\n<p>Steve Wille, was of the last generation of the Wille family to work at the shop, just like his dad, his grandfather and great grandfather before him.<\/p>\n<p>\u201cSolder, weld, flashings, hanging rain gutters; a magic show came in once,\u201d Wille said. \u201cSometimes the [Long Beach] Grand Prix guys would come in. We did all kinds of stuff.&#8221;<\/p>\n<p>Though Long Beach didn\u2019t get its first distillery until this year, with Downtown&#8217;s Portuguese Bend, master distiller Forest Cokely hopes to capture some of Long Beach\u2019s history in his spirits.<\/p>\n<p>\u201cI want people to realize how important Long Beach is to the history of the United States,\u201d Cokely said.<\/p>\n<p>After Prohibition, bartenders from the UK came to Long Beach to teach people how to bartend again.<\/p>\n<p>\u201cThe U.S. Bartenders Guild was literally started in Long Beach,\u201d Cokely said.<\/p>\n<p>A gin will be called \u201cGinipero,\u201d as long as label approval goes as planned. Whiskey, brandy, and rum are also in the works.<\/p>\n<p>\u201cWe\u2019re gonna be available in other states, we\u2019re gonna be available in other countries,\u201d Molina said. \u201cAs small as it is, it\u2019s gonna pack a punch.\u201d<\/p>\n<p><em>Wille&#8217;s Tin Shop is located at 1115 E Wardlow Rd.
