David owns <a href=\"http:\/\/aulddubliner.com\/\">The Auld Dubliner<\/a> which he opened 15 years ago. Christy was the longtime manager of the place until he left to open The Ordinarie which, according to our own Brian Addison, is pretty great place itself.<\/p>\n<blockquote class=\"wp-embedded-content\" data-secret=\"EK3qyTtkW7\"><p><a href=\"https:\/\/lbpost.com\/hi-lo\/food\/the-ordinarie-american-comfort-food-dtlb-addison\">The Ordinarie takes on American comfort food with the care and elevation it deserves<\/a><\/p><\/blockquote>\n<p><iframe loading=\"lazy\" class=\"wp-embedded-content\" sandbox=\"allow-scripts\" security=\"restricted\" style=\"position: absolute; visibility: hidden;\" title=\"&#8220;The Ordinarie takes on American comfort food with the care and elevation it deserves&#8221; &#8212; the Hi-lo\" src=\"https:\/\/lbpost.com\/hi-lo\/food\/the-ordinarie-american-comfort-food-dtlb-addison\/embed\/#?secret=pFfbR6p6Jn#?secret=EK3qyTtkW7\" data-secret=\"EK3qyTtkW7\" width=\"500\" height=\"282\" frameborder=\"0\" marginwidth=\"0\" marginheight=\"0\" scrolling=\"no\"><\/iframe><\/p>\n<p>The Dubliner has become a landmark all its own. Located on South Pine, across the street from the Convention Center, David said the pub not only has \u201clocal locals,\u201d but \u201cannual locals,\u201d people who show up for conventions every year and \u201cfirst thing they do is race across the street to get a seat at the bar.\u201d<\/p>\n<p>And when they\u2019re seated, chances are they\u2019ll order a Guinness. Auld Dubliner has the distinction of consistently being in the top three in terms of Guinness sales in the state of California.<\/p>\n<p>\u201cOnly Johnny Foley\u2019s [Irish House] in San Francisco and The Field [Irish Pub] edge us out,\u201d Christy said. \u201cWe go through more Guinness here than some pubs in Ireland.\u201d<\/p>\n<p>If David had his way, folks here would approach and use the Dubliner much more like the Irish do a pub; more on that later. As for Christy, he would appreciate it if he\u2019s faking it.<\/p>\n<p>\u201cYeah, I get the question many times, \u2018Do they make you put on the accent because this is an Irish pub?\u2019 \u201d Christy said.<\/p>\n<p>When we suggested that this is Southern California and everyone is assumed to be playing one kind of role or another, his \u201cyeah, maybe\u201d response seemed less than placated.<\/p>\n<p>Anyway, we figured we\u2019d talk to Christy and David about St. Patrick\u2019s Day. They agreed. Christy asked how long we\u2019d need. \u201cOh, about 15 minutes,\u201d we said. They were great, though it was clear once we got together that the highlight of their weekend would be Saturday\u2019s Six Nations rugby showdown between Wales and defending champion Ireland. Photo by Thomas R Cordova.<\/figcaption><\/figure>\n<p><em>You lived in Boston, Christy? I know St. Patrick\u2019s Day there is a lot different. You actually get the day off, it\u2019s a real holiday.<\/em><\/p>\n<p>It should be a real holiday <em>here<\/em>. The trains wouldn\u2019t have reached California if it wasn\u2019t for the Irish workers going one way and the Chinese workers going the other way.<\/p>\n<p><em>I\u2019ve heard that it\u2019s significantly different in Ireland itself.<\/em><\/p>\n<p>Christy: It\u2019s somewhat different. Years ago, it used to be a religious holiday. It\u2019s always more of a family day in Ireland than the booze fest it is here, you know, a day definitely a few people will be swimming beyond their depths.<\/p>\n<p>David: Yeah, I\u2019d say it\u2019s very, very different. For one, it\u2019s a national holiday, not an invented holiday. It\u2019s our Fourth of July, our day to celebrate Irishness. As Christy says, it\u2019s a family day; you\u2019d go to church in the morning and then, eventually, you end up at the pub. But again, it\u2019s more of a family thing. Everybody goes to the pub. That\u2019s something we\u2019ve been trying to do here, to make the Dubliner a place you bring your family, your kids. I know that people think pub is just another name for a bar, but a pub is very different than a bar.<\/p>\n<p><em>How so?<\/em><\/p>\n<p>David: Well, the easiest way to put it is that a bar is where people go to drink and maybe they socialize after. But a pub is where you go to socialize and maybe have a drink. It\u2019s a place you go and talk. You\u2019ll see pictures of pubs and there will be two ladies, chatting with teacups in front of them. That\u2019s what we\u2019d like the Dubliner to be.<\/p>\n<p><em>I\u2019m guessing there won\u2019t be a lot of tea served on Sunday? What kind of special preparations do you have to make?<\/em><\/p>\n<p>Christy: We are an Irish bar every day of the year, we just prepare for a busier version of every day.<\/p>\n<p><em>But, it\u2019s such a big day, is there some kind of strategy, especially when it comes to how much Guinness you order?<\/em><\/p>\n<p>David: Well, yes. The strategy is don\u2019t run out of Guinness. Yes, we order a lot more Guinness for the day because we\u2019ll do roughly a week\u2019s worth of business in that one day.<\/p>\n<p><em>Have you ever not stuck with the strategy?<\/em><\/p>\n<p>I guess I can divulge now that there was a St. Patrick\u2019s Day a few years back that after the day ended, I went to pour myself a pint to relax as we wrapped everything up and I got about half a pint out of the tap and that was it. No more.
