After months of construction and virus-related stress, the space will be soft opening Wednesday, Sept. 9, followed by a grand opening two weeks later.<\/p>\n<p>Bringing on Chef Brian Lavin to head the wood-fired-centric menu, Risse and his crew have departed from their German food focus\u2014beyond Rasselbocks in Long Beach and LA, they operate Wirtshaus in West Hollywood\u2014and opted to go Californian.<\/p>\n<p>\u201cWe moved here four years ago and we\u00a0<em>love<\/em> this neighborhood,\u201d Risse said earlier this year. \u201cThere\u2019s people walking, the schools are great, the community is great. But as far food goes, we know what we\u2019re missing. We have great ramen [at HiroNori], great Mexican [at Lola\u2019s], great pizza [at Dutch\u2019s], but we really don\u2019t have great, modern Californian cuisine.\u201d<\/p>\n<p>Think grilled prawns with romesco and a charred leek salsa verde. Or grilled whole dorade with Sicilian-style caponata. Or chicken liver mousse atop a crostini with pistachios, candied dates, and mustard syrup.<\/p>\n<figure id=\"attachment_10000024133\" aria-describedby=\"caption-attachment-10000024133\" style=\"width: 1110px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/img.lbpost.com\/wp-content\/uploads\/2020\/07\/17084513\/Wood-Salt-02.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-10000024133\" src=\"https:\/\/img.lbpost.com\/wp-content\/uploads\/2020\/07\/17084513\/Wood-Salt-02-1110x740.jpeg\" alt=\"\" width=\"1110\" height=\"740\" \/><\/a><figcaption id=\"caption-attachment-10000024133\" class=\"wp-caption-text\">Chef Brian Lavin. Photo by Sterling Reed.<\/figcaption><\/figure>\n<p>It is welcomed news: Bixby Knolls\u2014like other parts of the city, especially Belmont Shore\u2014has been facing an uphill battle when it comes to harnessing new restaurant concepts allowing staples to evolve with the times, something that has only been compounded with the pandemic.<\/p>\n<p>Much loved Levantine food hub Baba Ghanouj\u2014the creation of George Mitri, who introduced Long Beach to food from his home country of Lebanon\u2014<a href=\"https:\/\/lbpost.com\/hi-lo\/bixby-knolls-staple-baba-ghanouj-to-close-doors-on-feb-15\">closed abruptly<\/a> after serving the neighborhood for a decade.
