The Italian phrase describes the moment when love strikes\u2014so powerful and intense it cannot be denied\u2014without warning. In other words, love at first sight.<\/p>\n<p>And this is where Jay Stebbins got the name for his restaurant\u2014Thunderbolt Pizza\u2014which opened its doors in Bixby Knolls on Oct. 31.<\/p>\n<p>\u201cIt\u2019s a Brooklyn-style, date-night pizzeria,\u201d Stebbins said. \u201cThe kind of place you can go for a nice salad, a pizza, and a bottle of wine on a date, or with your family, or to hang with a bunch of friends. The type of pizzeria I\u2019ve always gravitated to.\u201d<\/p>\n<p>Originally from New York, Stebbins moved to the Bay Area for about four years. He then moved back to New York but said it just wasn\u2019t the same. So he packed up again and moved to Southern California to join his brother Brandt, who owns and operates Stoney\u2019s Pizza in Huntington Beach.<\/p>\n<figure id=\"attachment_10000032655\" aria-describedby=\"caption-attachment-10000032655\" style=\"width: 2560px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-10000032655\" src=\"https:\/\/img.lbpost.com\/wp-content\/uploads\/2020\/11\/10140147\/THUNDERBOLT_5542-scaled.jpg\" alt=\"\" width=\"2560\" height=\"1706\" \/><figcaption id=\"caption-attachment-10000032655\" class=\"wp-caption-text\">Thunderbolt Pizza owner Jay Stebbins prepares dough by hand. Photo by Brandon Richardson.<\/figcaption><\/figure>\n<p>Throughout his 20s and 30s, Jay said he gained tons of restaurant experience\u2014from serving to bartending to managing to opening. But this is the first time he has opened his own restaurant with his own money, he said.<\/p>\n<p>\u201cI always said the only restaurant I would ever do myself would be a pizzeria,\u201d Stebbins said, adding that opening up any other type of restaurant during a pandemic would be much more difficult.<\/p>\n<p>\u201cObviously, pizza delivers really well,\u201d he said.<\/p>\n<p>Stebbins has always loved eating pizza and over the years has developed an affinity for making it himself. He even went as far as building a wood-fired oven in the backyard of his Huntington Beach home. (But he is planning to move to Bixby Knolls as soon as possible, he added.)<\/p>\n<p>As a self-taught pizzaiolo pulling from his New York roots, Stebbins\u2019 pizzas have a thin crust made with hand-stretched dough. Photo by Brandon Richardson.<\/figcaption><\/figure>\n<p>One lesson Stebbins learned from Brooklyn is the importance of collaboration within a community.<\/p>\n<p>\u201cYou reach out to the other businesses that have great products,\u201d Stebbins said. \u201cI\u2019m going to reach out to Cheese Addiction, Gusto Bread is doing nice stuff, there\u2019s a smoked meat place. I\u2019ll start looking at what they\u2019re doing and bringing some of their products into my pizza.\u201d<\/p>\n<p>Stebbins even hinted at a potential collaboration with nearby Bixby\u2019s Brooklyn Deli for a pastrami pizza.<\/p>\n<p>But the most crucial collaboration is the partnership Stebbins already has with his neighbors: Ambitious Ales. When he first began the search for the perfect location, Stebbins said he was specifically looking at breweries.<\/p>\n<p>\u201cPizza and beer is a fantastic combination,\u201d he said, \u201cyou don\u2019t really need to sell anyone on that.\u201d<\/p>\n<figure id=\"attachment_10000032657\" aria-describedby=\"caption-attachment-10000032657\" style=\"width: 2560px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-10000032657\" src=\"https:\/\/img.lbpost.com\/wp-content\/uploads\/2020\/11\/10140201\/THUNDERBOLT_5595-scaled.jpg\" alt=\"\" width=\"2560\" height=\"1541\" \/><figcaption id=\"caption-attachment-10000032657\" class=\"wp-caption-text\">A pizza bakes in the wood-fire oven at Thunderbolt Pizza. Photo by Brandon Richardson.<\/figcaption><\/figure>\n<p>In the midst of the pandemic, the partnership is particularly beneficial for the brewery because they are now open for business, serving up beers on their outdoor patio. To open with outdoor service, local and state law requires bars and breweries to team up with restaurants to incorporate food.<\/p>\n<p>But the partnership has mutual benefits. Stebbins said his team will constantly be aware of Ambitious Ale\u2019s flavor profiles and work to craft pizzas, salads and other dishes that compliment them.<\/p>\n<p>Ambitious Ales has been closed since mid-March, with the four owners pivoting business to a focus on distribution, including canning their beers, a product type the brewery did not offer pre-pandemic. Prior to opening, Stebbins would fire up his oven and dish out some test pizzas and other menu items to the Ambitious team.<\/p>\n<p>\u201cThe pizza is really good. He\u2019s got some cool options and he\u2019s using high-quality ingredients,\u201d said Garrett Carroll, co-owner and master brewer of Ambitious Ales. \u201cWe\u2019re definitely excited to be working with him.<\/p>\n<p>\u201cHe focuses pretty heavily on the dough\u2014he\u2019s really big on fermentation,\u201d Carroll added, noting that the two companies have that in common.<\/p>\n<figure id=\"attachment_10000032654\" aria-describedby=\"caption-attachment-10000032654\" style=\"width: 2560px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-10000032654\" src=\"https:\/\/img.lbpost.com\/wp-content\/uploads\/2020\/11\/10140141\/THUNDERBOLT_5632-scaled.jpg\" alt=\"\" width=\"2560\" height=\"1600\" \/><figcaption id=\"caption-attachment-10000032654\" class=\"wp-caption-text\">Thunderbolt Pizza opened in Bixby Knolls on Oct. 31. Photo by Brandon Richardson.<\/figcaption><\/figure>\n<p>While the partnership is particularly beneficial during the pandemic for Ambitious Ales, Carroll said the brewery owners don\u2019t foresee any lapse in the collaboration when business mandates begin to lax and ultimately lift.<\/p>\n<p>Thunderbolt is the fourth pizzeria to call 4085 Atlantic Ave. home. Red Brick Pizza, Bella Pizza and, most recently, PowWow Pizza, which closed in January after about a year, previously operated out of the storefront. But Blair Cohn, executive director of the Bixby Knolls Business Improvement Association, has high hopes for the new venture.<\/p>\n<p>\u201cThis is music to our ears. [Stebbins] wants to be part of the community, a fixture,\u201d Cohn said. \u201cHe created a nice space.
