{"id":32829,"date":"2023-01-22T08:00:09","date_gmt":"2023-01-22T16:00:09","guid":{"rendered":"https:\/\/lbpost.com\/hi-lo\/?p=30000029456"},"modified":"2023-01-24T08:49:13","modified_gmt":"2023-01-24T16:49:13","slug":"belmont-shore-breakfast-hugo-sanchez-food-network","status":"publish","type":"post","link":"https:\/\/lbpost.com\/esd\/hi-lo\/food\/belmont-shore-breakfast-hugo-sanchez-food-network","title":{"rendered":"Belmont Shore breakfast spot retools menu with new chef, a Food Network producer"},"content":{"rendered":"<p>Let&#8217;s Yolk About It, a Belmont Shore breakfast spot, survived after opening a year into the pandemic, and now the owner is revamping its menu and brought in a big name chef who is a freelance producer on the Food Network.<\/p>\n<p>Owner Rebecca Hinderer brought in chef Hugo Sanchez, who has worked on a variety of cooking competition shows including &#8220;Cutthroat Kitchen&#8221; and &#8220;The Next Food Network Star.&#8221;<\/p>\n<p>Sanchez and his sous chef Kyle Fry have already begun bringing in new vendors, new products and are retooling the menu with the goal of having it solidified by March 1.<\/p>\n<p>&#8220;I&#8217;m all about simplicity,&#8221; said Sanchez, who is also a partner at MeeMa&#8217;s in Bixby Knolls and the culinary director at soon-to-come <a href=\"https:\/\/www.lataco.com\/brown-soul-brewery-south-gate\/\">Brown Soul Brewery Co. in South Gate<\/a>. &#8220;I like a menu that is about consistency and authenticity. I\u2019m a Mexican-American and I travel the world, so I derive my influences from everywhere.\u201d<\/p>\n<p>The tentative menu includes options like the vegan burrito and veggie breakfast sandwich as well as customer favorites like huevos rancheros and fried French toast. It wasn&#8217;t the best time to be in the restaurant business, as the city had enacted <a href=\"https:\/\/lbpost.com\/news\/dine-in-outdoor-closed-shut-down-restaurants-covid\">indoor dining bans<\/a> due to a high number of cases and deaths from COVID-19.<\/p>\n<p>The restaurant went in knowing this, but Hinderer said she was fortuitous in finding landlords willing to work with her in signing a lease at\u00a0the location that was formerly Thai Gourmet.<\/p>\n<p>She admits it was also a bit naive.<\/p>\n<p>\u201cWe were just jumping into an empty pool,\u201d Hinderer said. \u201cWe saw a little water at the bottom and we thought we could swim, and it ended up being enough for us.\u201d<\/p>\n<p>They focused on a lot of take-out service and scraped by, especially with items like burritos that travel well.<\/p>\n<p>&#8220;The community really came out and supported us,&#8221; she said.<\/p>\n<figure id=\"attachment_10000081909\" aria-describedby=\"caption-attachment-10000081909\" style=\"width: 1800px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-10000081909\" src=\"https:\/\/img.lbpost.com\/wp-content\/uploads\/2023\/01\/19173058\/YOKE-2_6294.jpg\" alt=\"\" width=\"1800\" height=\"1201\" \/><figcaption id=\"caption-attachment-10000081909\" class=\"wp-caption-text\">An order of French toast at Let&#8217;s Yolk About It, a breakfast spot on Second Street in Long Beach&#8217;s Belmont Shore neighborhood. Photo by Brandon Richardson.<\/figcaption><\/figure>\n<p>Now, two years later, Hinderer is the sole owner\u2014the previous co-owner, Melissa Almeraz, stepped away in July\u2014and is looking to recharge with fresh dishes and new talent, which also includes new general manager Brianna Jackson.<\/p>\n<p>Hinderer said the focus of the restaurant will be quality over quantity.<\/p>\n<p>\u201cWe don\u2019t want 50 OK things,&#8221; she said. &#8220;We want 20 to 25 amazing items and that\u2019s (Sanchez), that\u2019s chef. He has a certain finesse, salt of the earth, and he sticks with his style.\u201d<\/p>\n<p>Among his many accolades, Sanchez is a food stylist and culinary producer for shows on The Food Network, as well as Netflix, Hulu and Peacock TV.<\/p>\n<p>Hinderer connected with Sanchez through a mutual friend, and during one of those meetings he made her a meal that made a lasting impression.<\/p>\n<p>\u201cIt was a vegetarian breakfast sandwich, the eggs were incredibly fluffy, there was arugula and white cheddar on a brioche,&#8221; she said. &#8220;I don\u2019t know why, but it was a knockout for me.\u201d<\/p>\n<figure id=\"attachment_10000081911\" aria-describedby=\"caption-attachment-10000081911\" style=\"width: 1800px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-10000081911\" src=\"https:\/\/img.lbpost.com\/wp-content\/uploads\/2023\/01\/19173105\/YOKE-4_6240.jpg\" alt=\"\" width=\"1800\" height=\"1276\" \/><figcaption id=\"caption-attachment-10000081911\" class=\"wp-caption-text\">Formerly What&#8217;s Crackin, the Belmont Shore breakfast spot Let&#8217;s Yolk About It opened during the pandemic and is now revamping its menu with a new chef.
