Following Chef Michael Poompan\u2019s departure for State Fare at the Ritz-Carlton Rancho Mirage, the Renaissance Long Beach has hired Janine Falvo as Executive Chef of its SIP Lounge.<\/p>\n

Following the closure of famed Chef Suzzane Tracht\u2019s 2007 venture, Tracht\u2019s, at the Renaissance, the hotel was left with a hole in its culinary amenities. In 2010, SIP opened, though it wasn\u2019t until Poompan took over the kitchen a few years ago–and planted a rooftop garden, among other sustainable food efforts–that the lobby restaurant flourished to become one of Long Beach\u2019s most respected grub hubs.<\/p>\n
New chef Falvo is no stranger to the Renaissance family, having most recently served as Executive Chef at Briza and Rooftop 866 at the Renaissance Atlanta-Midtown. There, she introduced the area to the popular farm-to-table concept that reigns supreme at Long Beach hubs like James Republic and The Factory. Falvo also competed on Season 9 of the popular chef competition Top Chef<\/em>.<\/p>\n At SIP, Falvo plans on slightly altering that culinary philosophy by making seafood the star in an \u201cocean-to-fork\u201d style that mimics her previous endeavors but with a Long Beach twist.
