{"id":3507,"date":"2014-03-10T17:08:37","date_gmt":"2014-03-10T17:08:37","guid":{"rendered":"http:\/\/lbpost.com\/articles\/life\/food\/downtown-eatery-bo-beau-announces-executive-chef\/"},"modified":"2014-03-10T17:08:37","modified_gmt":"2014-03-10T17:08:37","slug":"downtown-eatery-bo-beau-announces-executive-chef","status":"publish","type":"post","link":"https:\/\/lbpost.com\/esd\/hi-lo\/food\/downtown-eatery-bo-beau-announces-executive-chef","title":{"rendered":"Downtown Eatery BO-beau Announces Executive Chef"},"content":{"rendered":"\n<p>BO-beau, <a href=\"https:\/\/lbpost.com\/life\/food\/san-diego-s-bo-beau-set-to-bring-rooftap-and-cal-french-cuisine-to-pine-avenue\/\" target=\"_blank\" rel=\"noopener noreferrer\">downtown\u2019s soon-to-open eatery along Pine Avenue<\/a>, has announced the hiring of its executive chef, Cohn Restaurant Group veteran Katherine Humphus.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" alignright size-full wp-image-28012\" style=\"float: right;\" src=\"https:\/\/lbpost.com\/wp-content\/uploads\/2014\/03\/BObeau_Humphus.jpg\" alt=\"BObeau Humphus\" width=\"300\" height=\"453\" \/>Having already headed BO-beau in Ocean Beach, San Diego, Humphus has gained notoriety in the San Diego area and was recognized as Best Local Chef by <em>Ranch &amp; Coast<\/em>, Top Female Chef by <em>Riviera Magazine<\/em> and Chef of the Year finalist for <em>U-T San Diego<\/em>.<\/p>\n<p>Though she was trained at Le Cordon Bleu in Paris, Humphus finds inspiration in all culinary styles.<\/p>\n<p>\u201cI gain inspiration from everyone,\u201d Humphus said. \u201cFrom every dish I taste, whether at a Michelin-starred restaurant or a hole-in-the-wall mom\u2019n\u2019pop, from every menu I read, from anything that makes me think, \u2018Wow, that&#8217;s really cool.\u2019\u201d<\/p>\n<p>It doesn\u2019t harm Humphus\u2019s prospects that she had worked with some of the best names in the industry: Thomas Keller of The French Laundry in Napa, Jeff Thurston from Bruxie throughout SoCal, Wylie Defrense of WD-50 in New York, and JJ Basil from Zero Degrees Zero in DC.<\/p>\n<p>As for how she will take to Long Beach\u2019s BO-beau location, it will revolve around keeping it simple with well-made, delicious food.<\/p>\n<p>\u201cThe approach will be the same as it has been since day one: create delicious, approachable food, and encourage people to try flavor profiles or combinations that they might not normally go for,\u201d Humphus said. \u201cThe big difference with BO-beau [in Long Beach] is the \u2018rooftap\u2019 concept, which will be a beer-centric menu.
