In my <em>ojos<\/em> there is nothing more beautiful than a traditional coastal Mexican dish, so I brought one back to share with you. <br \/><em><\/em><\/p>\n<p><em><em><img loading=\"lazy\" decoding=\"async\" class=\" size-full wp-image-19248\" style=\"border-style: initial; border-color: initial; cursor: default; display: block; border-width: 0px;\" src=\"https:\/\/lbpost.com\/wp-content\/uploads\/2012\/09\/IMAG2322-1-1.jpg\" alt=\"IMAG2322-1-1\" width=\"620\" height=\"462\" \/><\/em><\/em><\/p>\n<p><em>Aguachile de camar\u00f3n<\/em>&nbsp;is one of my favorites. It translates simply to shrimp in chile water, which is why we call it <em>aguachile de camar\u00f3n<\/em>. The original recipe calls for raw shrimp, but the curing (fridge time) process takes about 3 hours. If you don\u2019t have the time, you may&nbsp;modify the recipe using pre-cooked shrimp, which cuts down the curing time by about half.<\/p>\n<p><em>Por lo tanto, poner en su m\u00fasica de mariachi y vaya a la cocina para empezar a cocinar aguachile de camar\u00f3n.<\/em><\/p>\n<p>Ingredients:<br \/>1 avocado<br \/>1 bundle of cilantro<br \/>11\/2 english cucumber<br \/>1\/2 purple onion<br \/>1 pound fresh, head-on jumbo shrimp<br \/>1 tablespoon kosher salt, plus more to taste<br \/>1 cup freshly squeezed lime juice<br \/>1\/4 cup extra-virgin olive oil<br \/>2 to 3 fresh serrano chiles, sliced<br \/>1 package of tostadas <br \/>mayo optional<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" alignleft size-full wp-image-19250\" style=\"float: left;\" src=\"https:\/\/lbpost.com\/wp-content\/uploads\/2012\/09\/IMAG2316.jpg\" alt=\"IMAG2316\" width=\"310\" height=\"175\" \/><\/p>\n<p>Peel, devein, and butterfly the shrimp, leaving the tail intact but discarding the head. Sprinkle salt on shrimp, cover with plastic wrap, and refrigerate for at least 1.5 hours (at least 3 for raw shrimp).<\/p>\n<p>Next, thinly slice the&nbsp;cucumber and onions and set aside in a serving dish.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" alignright size-full wp-image-19252\" style=\"float: right;\" src=\"https:\/\/lbpost.com\/wp-content\/uploads\/2012\/09\/IMAG2317.jpg\" alt=\"IMAG2317\" width=\"310\" height=\"175\" \/><\/p>\n<p>In a blender, combine the lime juice, olive oil, chiles, and 1\/2 of a cucumber. Process until smooth, then season to taste with salt.<\/p>\n<p>Once shrimp is done, add cucumbers and onions, tossing all together.<\/p>\n<p>Just before serving, drizzle the shrimp with the lime-chile sauce and re-toss.<\/p>\n<p>Serve on a tostada prepared with a thin layer of mayo.<\/p>\n<p>Garnish with sliced avocados, cilantro, and more lime-chile sauce. &nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" size-full wp-image-19254\" style=\"display: block; margin-right: auto; margin-left: auto;\" src=\"https:\/\/lbpost.com\/wp-content\/uploads\/2012\/09\/IMAG2324.jpg\" alt=\"IMAG2324\" width=\"620\" height=\"350\" \/><\/p>\n<p>I know what you\u2019re thinking. What should I drink with this? Don\u2019t worry, because I have the perfect pairing for this dish. This recipe has been handed down by generations of women in my family. I asked my Nanie what the name of this drink was, and I was told that it was so good that it did not need a name. Bullshit, I am now naming it <em>Los Mujeres<\/em>. This drink can be served as agua fresca (without alcohol) or as a margarita.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" alignright size-full wp-image-19256\" style=\"display: block; float: right; margin-left: 5px;\" src=\"https:\/\/lbpost.com\/wp-content\/uploads\/2012\/09\/PicsArt_1346906887220-1.jpg\" alt=\"PicsArt 1346906887220 1\" width=\"300\" height=\"400\" \/><\/p>\n<p>How to make a LOS MUJERES:<\/p>\n<p>Ingredients:<br \/>1 cucumber<br \/>2 cups of freshly squeezed lime juice<br \/>1 bundle of mint leaves<br \/>1 cup of ice<br \/>Agave syrup (add to taste)<br \/>Tequila (strongly suggested)<\/p>\n<p><em>Mezclar<\/em> (blend)<em> todos los ingredientes<\/em>&nbsp;and strain before serving. This drink is great because the cucumber masks both the flavor and smell of the tequila.
