My son’s birthday is this month, the day after Christmas, and it’s nearly impossible to find an open bakery. That means I have to take over the culinary front. This year, I’m making him a hybrid cupcake: part cupcake, part ice cream cone. He is only two so this is just a great way to avoid a lot of mess.

You’ll Need:

1 package of Pillsbury Funfetti cake mix (makes 12 hybrids)

1 box of multi-color ice cream cones

1 can of icing

and lots of sprinkles

Prepare mix as directed on the box and preheat oven to 350 degrees. Spoon cake mix into ice cream cones. Place cones on a flat surface and bake for 35 minutes. I use a muffin pan which creates even spaces to place all the cones. Let cool for about 15-20 minutes and decorate. Remember, it’s suppose to look like ice cream so don’t worry if the cake mix spills down the side. Then it just looks like you have melted ice cream! The Funfetti cake mix can be substituted for any cake mix. What combination of cake and icing would you use? Let us know in the comments.
