Zaferia’s popular Colombian-inspired restaurant and bar, Selva, is preparing to launch Test Kitchen Tuesdays, a new monthly and evolving six-course dinner series beginning Tuesday, Dec. 19.

Each month, a new menu and immersive experience will be curated by Selva’s Chef Carlos Jurado and will be available for one night only.

Featured items for the series’ inaugural dinner will include a scallop crudo, croquettes of duck confit with rocoto chili jam and bresaola (salt, dried beef), as well as pumpkin nuegados, which were inspired by a popular Salvadorian fried dough dessert with chancaca, a warm South American sweet sauce made from sugarcane.

A limited amount of seats will be sold each month for the special dinner, which begins at 6 p.m. at the restaurant. Tickets are priced at $95 per person and reservations can be made through Yelp.

Drink pairings crafted by Mike Borowski, Selva’s bar director, will be offered for an additional $50. Drink pairings will include crafted cocktails like the “La Rosa,” made with rose, apple, pomegranate, lemon, and amaro.

For the Dec. 19 dinner, the intimate experience will include a darkwave cumbia playlist curated by Jurado and complementary aromas of frankincense and amber wood.
