Following Chef Michael Poompan’s departure for State Fare at the Ritz-Carlton Rancho Mirage, the Renaissance Long Beach has hired Janine Falvo as Executive Chef of its SIP Lounge.
Following the closure of famed Chef Suzzane Tracht’s 2007 venture, Tracht’s, at the Renaissance, the hotel was left with a hole in its culinary amenities. In 2010, SIP opened, though it wasn’t until Poompan took over the kitchen a few years ago–and planted a rooftop garden, among other sustainable food efforts–that the lobby restaurant flourished to become one of Long Beach’s most respected grub hubs.
New chef Falvo is no stranger to the Renaissance family, having most recently served as Executive Chef at Briza and Rooftop 866 at the Renaissance Atlanta-Midtown. There, she introduced the area to the popular farm-to-table concept that reigns supreme at Long Beach hubs like James Republic and The Factory. Falvo also competed on Season 9 of the popular chef competition Top Chef.
At SIP, Falvo plans on slightly altering that culinary philosophy by making seafood the star in an “ocean-to-fork” style that mimics her previous endeavors but with a Long Beach twist. Her new menu is currently being developed and should be unveiled to the public by the end of next month.
