As ubiquitous as a shared midnight New Year’s kiss is the celebratory clinking of a glass filled with champagne. But this year I wanted to introduce you to a twist on the ol’ sip of champagne with something a little more refined.

So refined, in fact, it’s been dubbed “The Champagne Cocktail.”

If you’re a fan of Old Fashioned cocktails (like I am) remembering this three-ingredient recipe will be a cinch.

You’ll need:

  • 1 sugar cube
  • 2-3 dashes of Angostura bitters
  • 6 oz (one glass flute full) of champagne.

All you’ve got to do is drop the sugar cube into your glass, preferably a champagne flute. Then douse that sugar cube with 2-3 dashes of bitters—maybe more if you really enjoy that flavor.

Then, pop open the champagne and fill the glass to the rim. It’ll take a while for the sugar to dissolve, so if you want to speed up the process you can muddle the sugar cube in the glass before or after you’ve poured the champagne.

Lastly, you can also opt to add a lemon twist as a garnish—and that’s it!
